Cupcakes in wood-fired oven
Ingredients needed
- 18 eggs
- 1kg flour
- 1kg sugar
- 1 liter of oil
- 1 sachet of yeast
Recipe preparation
- Preheat the oven: Turn on the wood-burning oven and let it reach a medium temperature, about 180°C.
- Prepare the mixture:In a large bowl, beat the eggs until frothy, add the sugar and oil and beat until smooth.
- Dry ingredients:Sift the flour and add the sachet of baking powder. Gradually add the flour and yeast mixture to the liquid mixture. Meanwhile, whisk constantly to prevent lumps from forming.
- Filling the molds: Do not fill them to the top to prevent the mixture from overflowing when it starts to rise.
- Bake:Place the molds in a wood-fired oven and bake until the muffins are golden brown and a toothpick comes out clean when pierced with a toothpick.
- Let cool:Once ready, remove the muffins from the oven and let them cool.
*These delicious muffins are perfect to take advantage of the residual heat that remains in the wood-fired oven, after having been used for another recipe. An ideal way to take advantage of the heat of the clay oven and at the same time, to enjoy some fluffy homemade muffins.
