Wood-fired Oven Roasted Potatoes
Ingredients needed
- Potatoes for garnish 500 g
- Extra virgin olive oil
- 2 c/s
- Oregano, rosemary, thyme...
- Ground Black Pepper
- Salt
Recipe preparation
- Preheat the oven to 200 °C with heat up and down.
- Wash the potatoes well (keeping the skin on) to remove any traces of soil. Cut them in halves or quarters and make shallow grid cuts to better absorb the spices.
- In a bowl, mix the potatoes with spices to taste and stir well (rosemary, thyme, oregano, ground garlic, ground black pepper...) and add salt to taste and olive oil.
- Place the potatoes in an earthenware casserole dish.
- Bake at 180 °C for 25-30 minutes. To check if they are ready, prick with a toothpick: if it goes in and comes out easily, they are ready to enjoy.
*Serve as a side dish with meat, fish, assorted vegetables or as a snack for the center of the table. You can also serve them with a homemade sauce; mayonnaise, aioli, pink sauce or yogurt sauce. Or with a delicious green pesto or the classic salsa brava.
